Hi Wendy,
Your birman could be chewing things for a few reasons, she could have itchy or sore gums/teeth and the chewing helps relieve them. Try and take a look at her teeth and gums to see if there is any signs of inflammation or redness. Try getting her a rubber toy or even one of those baby rusks for her to chew on - instead of your cords!
Also, when she bites you it is time to be firm. Cats have very short (convenient!!) memories.. so if you are playing and she starts to bite, make sure you give her a stern "NO!" right away and remove your hand. You'll need to be consistent with this so she gets the message that being playful is fun but biting is bad.
Another reason could be that she is feeling a little bored. Birmans are a very intelligent cat and although placid they do like some mental stimulation. Try and play with her at least once a day to tire her out. Toys filled with catnip are usually loved by Birmans!
