I'm going through this with Smokey right now. He's an adult and has never been around other cats so he also has no concept of what is too rough. He's broken my skin a couple times. Not good if he will ever be near children. I spoke to a pet behaviorist at Purina who suggested I do the following.
When Smokey bites, I must
1)Say No in a firm voice
2)Push against his face and blow into his face at the same time. (for the first few weeks...he should respond only to the word, "No" after a while)
3)Completely ignore him for 5 minutes
The reason I think your being still works is because its an ignoring behavior. Ignoring is one of the most effective negative reinforcement tools you can use. Never hit or shove your kitty. And don't scream or yell. Just be firm and keep your voice deep.
Also, give lots of positive feedback too. In other words, when you have a petting session and he doesn't bite, tell him he's a good kitty. Make sure to always reward the behaviors you want in your cat.
