If you can get a large carrier into the car, this would be the best arrangement. Put a small litterbox in with her. I can tell you right now, that she will "go" when she needs to! I transported a cat for a 200 mile trip - stopped and let him out of the carrier and put him in the box midway. No dice... About 30 minutes later we could smell the cat pee. Luckily we had lined his carrier with a thick towel. He was not happy, but he made it with no lasting harm. There is a cat safe-t jacket which is advertised on this site. You might want to consider getting on for your cat, although she won't like it. Then you could "grab" her if she doesn't cooperate leaving the motel room. Good luck!
Please don't put the cat in a carrier in the back of a U-Haul. This would be very dangerous. She needs to be in the car with you.
