traveling with 6 month old

My wife and I are going to be traveling about 500 miles for the holidays. We have a 6 month old kitten and are planning to bring her along for the trip as we can't find anyone to watch her. She travels for 15-30 minute drives quite well but we'll be in the car for 8 or so hours. Would it be a good idea to simple let her out of the carrier? That way we could place her litter box in the back seat along with her food dish. Other than my fear that she will try and play with the clutch is this not worth the trouble? Has anyone else taken long trips and tried this or are we better off just keeping her in the carrier for the duration of the trip? Thanks in advance.
